Breakfast Egg Strata
This Egg Strata is always a hit with our family and our farmhouse guests - everyone loves it! This Egg strata recipe makes for a quick hearty breakfast or brunch dish that can be whipped up the night before or the morning of.

8' square baking pan
- 1 small chopped onion
- 1/2 Cup chopped red pepper
- 4 Cups packed chopped spinach
- 1 pkg (6 oz) Stove Top Stuffing (chicken flavor)
- 2 Tbsp fresh parsley
- 6 eggs
- 3/4 Cup shredded mozzarella cheese (can use your favorite cheese)
Preheat oven to 375 degrees f
Spray large skillet with cooking spray
Add onion and red pepper to skillet
Cook and stir on medium-high heat for 5 minutes or until softened
Stir in spinach. Stir until it's a little limp and set aside
Prepare stuffing as directed on box
Stir in onion mixture and parsley in skillet
Beat/ whisk eggs
Combine everything (eggs, stuffing, and the ingredients on the skillet) in a large bowl
Pour into a greased 8' square baking pan
Sprinkle with cheese
Bake about 35 minutes (until firm and the top of the strata is golden brown)
Let cool for 15 minutes
Cut into strips or squares and serve warm
