Ingredients
  

Crumb Mixture

  • 1/2 cup butter melted
  • 1 cup brown sugar
  • 1 cup flour
  • 3/4 cup oatmeal

Filling

  • 1 cup sugar
  • 1 teaspoon cornstarch
  • 1 cup water
  • 4 cups rhubarb strawberries, or apples, cut up

Instructions
 

  • Preheat oven to 350°F
  • Prepare the rhubarb by washing and cutting into bite sized pieces
  • In a bowl, combine melted butter, brown sugar, flour, and oatmeal. Mix until crumbly.
  • Pat half of the crumb mixture into the bottom of an 8 or 9-inch square pan
  • Reserve the remaining crumbs for the topping
  • In a saucepan, combine sugar, cornstarch, and water. Cook over medium heat until thickened.
  • Stir the thickened mixture together with the rhubarb, apples, or strawberries
  • Pour fruit mixture over the bottom crust
  • Sprinkle reserved crumb mixture evenly over the top
  • Bake for about 45 minutes, until bubbling and golden
  • Serve warm with ice cream or whipped cream
