Ingredients
Crumb Mixture

butter
melted

brown sugar

flour

oatmeal
Filling

sugar

cornstarch

rhubarb
strawberries, or apples, cut up
Instructions
Preheat oven to 350°F
Prepare the rhubarb by washing and cutting into bite sized pieces
In a bowl, combine melted butter, brown sugar, flour, and oatmeal. Mix until crumbly.
Pat half of the crumb mixture into the bottom of an 8 or 9-inch square pan
Reserve the remaining crumbs for the topping
In a saucepan, combine sugar, cornstarch, and water. Cook over medium heat until thickened.
Stir the thickened mixture together with the rhubarb, apples, or strawberries
Pour fruit mixture over the bottom crust
Sprinkle reserved crumb mixture evenly over the top
Bake for about 45 minutes, until bubbling and golden
Serve warm with ice cream or whipped cream
