Homemade Oatmeal Cream Pies

You can now tell your kids you have Little Debbie's at home!

Ingredients
  

Cookies

  • 1 1/2 cups Quick cooking oats
  • 1 1/2 cups All-purpose flour
  • 1 tsp Baking soda
  • 1 tsp Cinnamon
  • 1/2 tsp Salt
  • 1/2 cup Firmly packed dark brown sugar
  • 1/2 cup White sugar
  • 1/2 cup Unsalted butter melted
  • 1/2 cup Water
  • 1 large Egg yolk
  • 1 tsp Vanilla extract

Filling

  • 1 large Egg white
  • 3 tsp White sugar
  • 1/8 tsp Cream of tartar
  • 1/4 tsp Vanilla extract

Instructions
 

Cookies

  • Preheat oven to 375° and line 2 baking sheets with parchment paper
  • Whisk together oats, flour, baking soda, cinnamon, and salt
  • In a separate bowl, whisk together brown sugar, white sugar, butter, egg yolk, vanilla and 1/2 cup water
  • Add flour mixture and mix until combined
  • Spoon out the dough onto your baking pans and flatten them to about 1/2 inch thick and 2 inches in diameter. Space them about 2 inches apart
  • Bake for 9 - 12 minutes until the edges are golden brown
  • Let cool completely on a wire rack

Fillings

  • Prepare a pan with simmering water
  • Whisk egg white, sugar, and cream of tartar
  • Set the bowl of ingredients over the water but not touching it
  • Whisk constantly until sugar is dissolved and mixture is warm to the touch. This will be about 2 minutes
  • Remove from heat and whisk warm mixture on medium speed with an electric mixer until soft peaks form (about 2 to 3 minutes)
  • Beat in the vanilla during this process
  • Spread filling on the cookies
