This recipe may seem like an ambitious concept, but it really is quite manageable – two oatmeal cookies with a layer of sweet filling in between, just like the owners of Little Debbies intended it!

Making Homemade Oatmeal Cream Pies

Cookies:

  • 1 1/2 cups quick-cooking oats
  • 1 1/2 cups all-purpose flour
  • 1 tsp baking soda
  • 1 tsp cinnamon (a must!)
  • 1/2 tsp kosher salt
  • 1/2 cup firmly packed dark brown sugar
  • 1/2 cup white sugar
  • 1/2 cup unsalted butter, melted
  • 1 large egg yolk
  • 1 tsp vanilla extract (we love using Watkins vanilla)

Filling

  • 1 large egg white
  • 3 tbsp white sugar
  • 1/8 tsp cream of tartar
  • 1/4 tsp vanilla extract

Steps

Cookies

  1. Preheat oven to 375° and line two baking sheets with parchment paper
  2. Whisk together oats, flour, baking soda, cinnamon, and salt
  3. In a separate bowl, whisk together brown sugar, white sugar, butter, egg yolk, vanilla and 1/2 cup water. Add dry mixture and mix until combined.
  4. Spoon out the dough onto your baking pans and flatten them to about 1/2 inch thick and 2 inches in diameter. Space them about 2 inches apart.
  5. Bake for 9 – 12 minutes until the edges are golden brown
  6. Let cool completely on a wire rack

Filling

  1. Prepare a pan with simmering water
  2. Whisk egg white, sugar, and cream of tartar
  3. Set the bowl of ingredients over the water but not touching it
  4. Whisk constantly until the sugar is dissolved and the mixture is warm to the touch. This will be about 2 minutes
  5. Remove from heat and whisk warm mixture on medium speed with an electric mixer until soft peaks form (about 2 to 3 minutes). Beat in the vanilla during this process.
  6. Spread filling on the cookies

Tips to bake this treat to perfection!

What is cream of tartar? Are there substitutes?

Cream of tartar is a powder that prevents the egg whites from deflating. It produces the air-like quality in meringue and whipped cream. You can find it at your local grocery store, but if you don’t have it on hand and are craving these right now (I don’t blame you) you can use lemon juice or white vinegar. Measure these out as twice as much- so 1/4 tsp.

How should I place the filling?

Don’t worry about how to place the filling. Either way, it is going to go in between 2 cookies… and then into your mouth. But if you feel inspired and want an extra airy look, you can put the filling in a pipping bag. Also, make sure to let the cookies cool completely so the filling doesn’t start to melt onto them.
