It’s a cold Sunday afternoon perfect for some quick and easy herb dumpling soup to go along with a game of cards.

Fluffy Herb Dumplings you can add to any soup

My Grandpa (who’s name just happened to be Herb) made these Herb Dumplings for me when I stopped by for lunch. I actually thought he was just naming them after himself- for more years then I’m willing to admit. I was so impressed. He acted like it was no big deal, because his mom made them for him and he knew the recipe well. They are so dang delicious!

On the day’s he would make dumplings, I would join him for lunch and a game of kings corners. We would enjoy our dumpling soup slowly, like there was nowhere else to be. Grandpa would almost always know the tricks to winning at cards too. It’s like he would invite me over, just so he could show me up.

Those are the type of memories that I think about when I serve these to my family, now. A little meal prep and then nice and slow indulgence of a good thing, together, with the ones you love the most.

Tips and FAQs

  • Why do my dumplings fall apart in soup? If your dumplings are falling apart, this means that they are overcooked – put them in while the soup is already boiling and you will be good to go. Make sure to stir gently!
  • What kind of soup can I put my dumplings in? We put these delicious dumplings into chicken soup, but you can add these to any soup of your choice. I’ve seen variations of these dumplings in dishes like pesto soup to beef stew!
  • For extra flavor, feel free to add cheese and make some cheesy herb dumplings
  • For the best dumplings, make them right before you add them to the soup. This is not dough you have to or want to leave sitting out!
