To me, a comforting dessert consists of two things: Watkins spices and gooey dough. I love making my caramel rolls and thought I’d add a fall twist with these pumpkin spice bites. This is the perfect suprise for hungry kids getting off the bus or a busy farm crew at the end of chilly day. With a batch of master dough ready to go, you can have your kitchen smelling like pumpkin spice in no time!

Making Pumpkin Spice Dough Bites

Ingredients

  • 1 pound baking dough (I love using my homemade Master Dough)

Filling

  • 2 tbsp pumpkin flesh or store-bought pumpkin puree
  • 1/2 cup melted butter
  • 1 cup brown sugar
  • 2 tsp cinnamon
  • 1 1/2 tbsp pumpkin spice

Icing

  • 4 oz cream cheese
  • 1/2 cup powdered sugar
  • 2 tbsp butter (softened)
  • 1 tsp pumpkin spice

Step-By-Step Instructions

  1. Preheat oven to 350° F
  2. Make pumpkin filling mixture (puree, butter, brown sugar, cinnamon, pumpkin pie spice). Stir Well
  3. Roll dough into balls and place in your 9×9 baking pan
  4. Coat dough with the filling mixture
  5. Bake for 25 minutes until golden brown
  6. Make the icing while the bites are baking
  7. Let cool and coat with icing
  8. Enjoy!

Can I refrigerate or freeze my homemade dough?

Yes – if you use my homemade dough recipe you can keep it in the fridge for up to 10 days or in the freezer for up to 3 months

What if I don’t have pumpkin pie spice on hand?

Check your pantry! Pumpkin pie spice is made of ginger, cinnamon, nutmeg, cloves, and allspice and can be made right in your own kitchen.

What additions can I make to this dessert?

If you want some added texture to these pumpkin bites I recommend adding chopped nuts or white chocolate chips! You can also add maple syrup to your icing for a maple cream cheese glaze.

How can I make my own pumpkin puree?

To make your own pumpkin puree, poke some vent holes in a clean pumpkin and place it into your instant pot and cook on high pressure for 10-20 minutes. This will allow your pumpkin to get soft enough to easily cut and scoop out the flesh. You can also go the oven route and remove the pulp and seeds first, then cut the pumpkin into slices to place and cook in your oven. Bake at 400° for 20 – 30 minutes.
