BLT Salad

A Savory Summer Salad

Some recipes are written down. Others are passed along.

This one came from a Mennonite family in our area. They made it for someone, who brought it to a 500 card party. By the end of the night, the bowl was empty and the recipe was being asked for.

That’s how it made its way here.

It’s the kind of salad that holds its place—simple ingredients, savory flavor, put together in a way that works every time.

Why This Salad Recipe Gets Remembered

Crisp lettuce, bacon, eggs, cheese, and a creamy homemade dressing with just enough tang to balance everything out. Then the corn chips come in at the end and change the texture completely.

It’s the combination that does it. Savory while still feeling light.

Nothing complicated—just well put together.

This salad is just one way to enjoy hard-boiled eggs, my Tasty Smoked Eggs are a favorite on the grill (and learn how I get Farm Eggs to peel)!

Ingredients

Salad

  • 1 large head lettuce, chopped
  • 1 pound bacon, cooked and crumbled (I always bake our bacon: single layer on a baking sheet, into a cold oven at 350° until crisp)
  • 6 hard-boiled eggs, chopped
  • ½ cup shredded cheddar cheese
  • 5 cups corn chips, coarsely broken
  • ½ small sweet onion, thinly sliced (optional)
  • 1–2 cups cherry tomatoes (optional)

Dressing

  • 1 cup mayonnaise
  • ¼ cup white sugar
  • ¼ cup brown sugar
  • 2 tablespoons vinegar
  • ¼ cup milk

Instructions

  1. In a small bowl, stir together the dressing ingredients until smooth.
  2. In a large bowl, combine the lettuce, bacon, eggs, cheese, and any optional additions.
  3. Right before serving, add the dressing and toss gently to coat. Fold in the corn chips last so they keep their crunch.

Serve immediately – Enjoy!

Notes for Best Results

  • Add the dressing and chips just before serving. If you are taking this salad to a party, pack the chips and dressing separately. That’s what keeps the texture where it should be.
  • Keep ingredients cold and chopped into bite-sized pieces so everything mixes evenly without needing much stirring.
  • Store in an air-tight container to keep everything fresh. This salad can last about 4 days in the fridge.

I like to use thin-cut bacon – it gets much crispier and is easy to chop up!

To keep this salad as fresh as it can be, I recommend tossing it together no more than a few hours before bringing it as a passing dish!

My favorite in this past year have been my Creamy Ranch Pasta Salad, Bread and Butter Pickle Dip, Peach Crisp, and Strawberry Pretzel Rice Krispies.
