A Hearty Butternut Squash Soup

Some of our most fulfilling Sundays are spent in the kitchen with our kids making a dish that everyone has a hand in! The house warming up with the smell of soup and fresh bread makes for a perfect winter afternoon.

When making any soup recipe, I make sure to choose ingredients that make it as filling and nutrient-packed as I can. With this one, I took our Butternut Squash Soup, enhanced the texture by choosing not to puree the squash, and packed it with sausage, barley, and spinach to make it a well-rounded meal.

Why have Butternut Squash as the star of your dish?

When it comes to squash we’ve tried it all – growing spaghetti to acorn but our favorite is the butternut squash. Not only is it seasonally delicious, but it stores incredibly well. We have just a few butternut squash left in our basement storage from this past year’s crop. It’s delicious plus it helps with digestive health, heart health, and is full of antioxidants.

Our garden will always have a spot for our butternut squash vines. It’s such a treat to have something nutritious and hearty straight from our garden to savor in the deep of winter.

Making Hearty Butternut Squash and Sausage Soup

Ingredients

  • 3 packs of Ring Bologna. We use a combination of venison and pork – you can use any kind of meat/sausage
  • 1 whole Butternut Squash (peeled and diced)
  • 1 Onion (diced)
  • 5 – 7 Garlic Cloves (chopped)
  • 8 cups Chicken Broth
  • 1 cup Rinsed Barley
  • 1 tsp Paprika
  • 1 tsp Salt
  • 1 tsp Pepper
  • 1/4 cup Cream
  • Handful of chopped Spinach

Step-By-Step Instructions

Step 1: Cook your sausage (we use ring bologna) and then slice into forkable pieces

Step 2: Add sausage, butternut squash, onion, and garlic to a pan and let simmer until softened

Step 3: Add everything from the pan into a crock pot along with chicken broth, barley, paprika, salt, and pepper

Step 4: Let cook on high for 40-50 minutes and then stir in cream and spinach

Do you leave skin on squash for soup? No, we peel the skin and toss it to the chickens, then chop it up to throw in the soup. This allows it to cook thoroughly and have a smoother texture

Do I need to cook the squash beforehand? Nope! The Crock Pot does all the work for you

How does this differ from regular butternut squash soup? In butternut squash soup, the squash will become the broth as you typically blend it up. We like the texture of the squash cut up in the soup and use chicken broth and cream to make up the broth instead

What can I pair with Sausage and Squash Soup? I have logged a lot of hours in our kitchen already this year, experimenting with our Sourdough starter. The result was a wide variety of breads, all pair wonderfully with this soup 🙂
